Whether you want to serve it as a side or use it as a filling in your sandwich, the coleslaw is a very versatile dish. And if you didn’t know, there is more than one recipe to the classic coleslaw that calls for veggies dressed in mayonnaise. Thanks to the vegetarian versions of mayonnaise, even those who avoid eggs in food can enjoy the coleslaw without a second thought. Here are some of the recipes of coleslaw that you can try with the eggless version of mayonnaise:
1.
Cheese and spring onion
coleslaw: All you need to make this cheesy coleslaw are shredded cabbage and
carrots, finely chopped spring onion greens, sliced red onion and eggless
mayonnaise with some Greek yoghurt, cheddar cheese, and a dash of mustard
thrown in. Toss everything together with seasoning and use in a sandwich.
2.
Apple coleslaw: When you want
something with a little more body in your coleslaw, add thinly sliced green
apples to the mix. For the recipe, combine cabbage with apple and carrots.
Dress with mayonnaise and some apple cider vinegar with seasoning. Add a pinch
of sugar to counter the acidity of the vinegar.
3.
Low-fat coleslaw: To prepare a
low-fat coleslaw, combine the cabbage, carrots and onions with equal amounts of
eggless mayonnaise and yoghurt. Alternatively, you can also use Veeba’s smart
mayonnaise which is eggless and low in fat and calories. Serve this coleslaw as
a salad with comfort food or in a sandwich.
4.
Sweet and sour coleslaw: Give
the classic coleslaw a twist with a sweet and sour dressing. Combine shredded
red and white cabbage, carrots, radishes, bell pepper and red onions in a bowl.
For the dressing, mix together eggless mayonnaise, vinegar, sugar, mustard
powder and khus khus seeds with seasoning. Combine the vegetables and the
dressing for the coleslaw.
5. Spicy mango slaw: When mangoes are in season, you can also prepare a tangy version of the coleslaw. To shredded cabbage, red pepper and onions, add some finely sliced raw mango. Dress the coleslaw with mayonnaise, lime juice and some chopped green chillies. Serve as a side to tandoori dishes and with other spicy barbecue meals.
